用途：生化研究。在辅酮I存在的条件下，催化包括乙醇在内的某些一级或二级醇、醛和酮的脱氢反应，催化正丁醛、肉桂醛、苯甲醛脱氢反应速度比乙醛大。脱下的氢由NAD接受，使之成为还原型辅酶I。酵母菌发酵生产酒精过程中，一步反应即由此酶催化，将乙醛还原成乙醇。
